Hearty Triple-Mushroom Chowder (Dairy-Free, Gluten-Free)

Warm, comforting, and deeply savory, this Hearty Triple-Mushroom Chowder brings together the rich umami flavors of shiitake, portabella, and button mushrooms in a velvety, dairy-free broth. Slow-sautéed mushrooms create a depth of flavor that rivals traditional cream-based chowders, while a swirl of unsweetened almond milk and a touch of arrowroot give it a silky, luxurious texture without the heaviness.

A medley of okra, peas, carrots, and corn adds color, nutrition, and natural sweetness, transforming this chowder into a nourishing, complete meal. Aromatic herbs such as tarragon, basil, thyme, and smoked paprika elevate the flavor profile, bringing freshness, warmth, and a beautiful herbal balance to every spoonful.

This hearty, wholesome soup is perfect for anyone seeking comfort food that still aligns with a clean, anti-inflammatory lifestyle. Cozy enough for a winter evening yet light enough for year-round enjoyment, it’s a flavorful bowl that satisfies the body and restores the soul.

You can cut the recipe in half for a smaller batch of chowder.

Ingredients

Base

  • 2 tbsp extra virgin olive oil ( you can use or add grass-fed butter for added richness)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz shiitake mushrooms, sliced (remove tough stems)
  • 8 oz portabella mushrooms, sliced
  • 8 oz button mushrooms, sliced

Liquids

  • 4 cups low-sodium chicken stock
  • 1 cup unsweetened almond milk
  • 2 tbsp arrowroot powder (mixed with 3 tbsp cool water to make a slurry)

Vegetables

  • 2–3 cups frozen soup vegetable mix (okra, peas, carrots, corn)

Herbs & Spices (perfect for mushrooms!)

  • 1 tsp dried tarragon
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • ½ tsp smoked paprika (adds depth)
  • ¼ tsp white pepper (classic in chowders)
  • Salt to taste
  • Optional: 1 tbsp nutritional yeast for a richer umami, cheese-like finish

Optional Add-Ins

  • 1–2 cups cooked shredded chicken (if you want added protein)
  • 2 tbsp chopped fresh parsley or chives for garnish

Instructions

  1. Sauté the Aromatics

Heat oil in a large pot over medium heat. Add the onion and cook 3–4 minutes until softened.

Add garlic and cook another 30–60 seconds.

  1. Cook the Mushrooms

Add all mushrooms to the pot. Cook 6–8 minutes, stirring occasionally, until mushrooms release their juices and reduce in size.

  1. Add Herbs & Spices

Stir in tarragon, basil, thyme, smoked paprika, white pepper, and a pinch of salt.

Let the herbs toast for 30 seconds to release flavor.

  1. Add Stock & Veggies

Pour in the chicken stock and bring to a gentle simmer.

Add the frozen soup vegetable mix. Simmer 10 minutes.

  1. Add Almond Milk

Stir in the almond milk and bring the soup back to a low simmer.

  1. Thicken the Chowder

Stir the arrowroot slurry into the pot while whisking to avoid lumps.

Simmer 2–3 minutes until thickened.

If too thick, add a splash more stock or almond milk.

  1. Finish & Serve

Taste and adjust salt/white pepper.

Optional: stir in nutritional yeast for extra richness.

Garnish with parsley or chives.
